Ingredients
For the rice
- 300 g Thakkar Premium Basmati Rice
- Plenty of water for boiling
- 1 teaspoon salt
- 1 bay leaf
- 3 green cardamom pods
- 4 cloves
- 1 small cinnamon stick
For the chicken masala
- 500 g boneless chicken thighs, cut into bite-sized pieces
- 150 g plain yoghurt
- 2 tablespoons cooking oil or ghee
- 1 large onion, thinly sliced
- 1 medium tomato, chopped
- 1 tablespoon ginger-garlic paste
- 1½ tablespoons biryani masala
- ½ teaspoon turmeric powder
- ½ teaspoon chilli powder, or to taste
- ½ teaspoon salt, or to taste
- 1 handful fresh mint leaves, roughly chopped
- 1 handful fresh coriander, roughly chopped
- 1 tablespoon lemon juice
- 2 tablespoons warm milk with a pinch of saffron, optional
- Crispy fried onions for garnishing, optional
How to make quick and easy chicken biryani
1. Rinse and soak the rice
Rinse the basmati rice gently under cold water until the water is nearly clear. Soak it in fresh water for 15 minutes while you prepare the remaining ingredients. Soaking helps the grains cook more evenly and reduces the chance of breakage.
2. Season the chicken
Combine the chicken, yoghurt, ginger-garlic paste, biryani masala, turmeric, chilli powder and salt in a bowl. Mix until the chicken is evenly coated. Leave it to rest while the onions cook. Even this short marinating time helps the chicken absorb the spices.
3. Prepare the chicken masala
Heat the oil or ghee in a wide, heavy-bottomed pan with a tight-fitting lid. Add the sliced onion and cook over medium-high heat until golden. Reserve a small portion for garnishing if desired.
Add the tomato and cook for 2 to 3 minutes, until softened. Add the marinated chicken and cook for approximately 8 to 10 minutes, stirring occasionally, until it is nearly cooked and the masala has thickened. Stir in half of the mint, half of the coriander and the lemon juice.
4. Parboil the basmati rice
While the chicken cooks, bring a large saucepan of water to the boil. Add the salt, bay leaf, cardamom, cloves and cinnamon. Drain the soaked rice and add it to the boiling water.
Cook until the grains are about 70% done: they should be flexible on the outside but still slightly firm in the centre. This usually takes around 5 to 7 minutes, depending on the pan and heat. Drain immediately and remove the whole spices if preferred.
5. Layer the biryani
Spread the chicken masala evenly across the bottom of the pan. Spoon the parboiled rice over the chicken without pressing it down. Sprinkle over the remaining mint and coriander. Drizzle with saffron milk and top with crispy fried onions, if using.
6. Steam on low heat
Cover the pan tightly and cook over the lowest heat for 10 to 12 minutes. Turn off the heat and leave the biryani covered for another 5 minutes. Check that the chicken is fully cooked before serving.
7. Fluff and serve
Use a wide spoon to lift the biryani gently from the bottom, bringing some of the chicken and masala through the rice. Avoid vigorous stirring, as this can break the delicate grains. Serve hot with cucumber raita, a fresh salad or your favourite chutney.
Tips for perfectly fluffy biryani
- Do not skip rinsing: Removing excess surface starch helps keep the cooked rice grains separate.
- Do not fully cook the rice before layering: The rice finishes cooking in the steam and absorbs the aroma of the chicken masala.
- Use a wide, heavy pan: It distributes heat more evenly and makes layering easier.
- Keep the final heat low: High heat can burn the masala before the rice has finished steaming.
- Let it rest: Five minutes of covered resting allows the steam to settle and gives the grains a better texture.

For a vegetarian version, replace the chicken with approximately 500 g of mixed vegetables such as cauliflower, carrots, green beans, peas and potatoes. Cook the vegetables until just tender before layering them with the rice.
